The Weekender: Post-Gym (or Hangover) Breakfasts
Weird to see a post with the headline offering breakfasts for both the hungover and the (overly) athletic, right? Well according to Hungrygrl, wrong. Since I am spending this summer interning 5 days a week in New York City, 10-6, and commuting from New Jersey, I don't get to spend as much time as I would like to in the kitchen in the morning. So, whether I am coming home from a Saturday morning spin-class or waking up semi-hungover after wine night with friends, my breakfast moves are one in the same.
I basically specialize in two types of weekend breakfasts: granola/cereal/fruit bowls and a plate compiled of 1/3 eggs, 1/3 toast, and 1/3 fruit. Starting with my Hungrygrl bowl, I usually start with a base of granola (any granola I can find really, but I like to ~treat myself~ to Back To Nature Chocolate Delight Granola). Since granola can sometimes be too clustered to eat like a cereal with a spoon, I sometimes add cereal to mix it up. Though the cereal I have in my house varies in availability and expiration date, I usually reach for Honey Bunches of Oats with Almonds. After I attempt to pour even amounts of granola and cereal into a bowl, I cut up some strawberries and usually use blueberries as well, or a banana, or some variation of the three. Then, I like to pretend I'm plating a dish for Chopped and symmetrically place each strawberry half and blueberry on top. If I'm happy with that then I add some milk and dig in, or if I'm feeling like I want to dare to dream, I add a dollop of PB in the middle. Here, you have your sweet, you have your salty, you have your crunch, and you have a little bit of cold from the drizzle of milk. For someone that wants to have it all, now you can.
If you lean towards the savory side and need bread/eggs/fruit/a little of everything in your life, here is the answer to your hungry prayers. Depending on what's in my fridge/what my sisters haven't eaten all of, I'll plate a small amount of fruit- watermelon, raspberries, blackberries, strawberries (do I like berries I'm not sure) and get to work on a toast and egg. For the toast, I usually always use a type of grain bread (like 15 grain bread) and will either mash an avocado for avocado toast or take some PB and banana for a sweeter option. If I'm making my eggs without cheese, I'll melt a slice of pepper jack instead. As for my eggs, I usually scramble them, with the exception of sometimes making a fried egg. I like scrambling eggs with fun ingredients, like cherry tomatoes and feta cheese. Once I put everything on the plate, I'll take some sort of condiment- I'm a little too obsessed with Sriracha Ketchup at the moment- and drizzle the eggs/toast if need be. It's quick and easy even for the most hungover person at the party.
If you don't think you can make any of the above breakfasts, just remember that I was making these before I figured out how to properly boil pasta... you're welcome.
